Aflatoxin G2
Aflatoxin G2 is another naturally occurring mycotoxin produced by the same species of fungi that produce other aflatoxins, namely Aspergillus flavus and Aspergillus parasiticus. Aflatoxin G2 is structurally similar to aflatoxin B2, but it has a slightly different chemical structure due to a hydroxyl group in a different position on the molecule. Aflatoxin G2 is considered to be less toxic than other aflatoxins, but it can still pose a health risk if present in food and feed. Like other aflatoxins, aflatoxin G2 is regulated by many countries and organizations, and efforts are made to prevent its contamination in food and feed. Aflatoxin G2 can contaminate crops such as peanuts, corn, cottonseed, and tree nuts, particularly in warm and humid conditions.
