Fumonisin B2

 

 

Fumonisin B2 is a mycotoxin, a toxic compound produced by certain types of fungi, particularly the fungus Fusarium verticillioides. It is closely related to fumonisin B1, another mycotoxin produced by the same fungus.

Like fumonisin B1, fumonisin B2 is commonly found in corn and corn-based food products, as well as in other grains such as rice and wheat. It is considered a potential human carcinogen and has been linked to liver and kidney damage, as well as other health effects.

The toxic effects of fumonisin B2 are thought to be due to its ability to inhibit sphingolipid biosynthesis, which can lead to disruption of cell membrane function and cell death. The exact toxic effects of fumonisin B2, however, are not as well studied as those of fumonisin B1.

To reduce the risk of exposure to fumonisin B2, it is recommended to avoid consuming moldy or contaminated grains and grain-based products. Proper storage and handling of grains can also help to prevent fungal growth and mycotoxin production. Testing for fumonisin B2 levels in food products is also performed by regulatory agencies to ensure safety for human consumption.
