Monascorubrin
Monascorubrin is a natural pigment produced by certain species of the fungus Monascus. It is a bright red pigment and belongs to the class of azaphilones, which are secondary metabolites produced by fungi and have a variety of biological activities.
Monascorubrin has been used traditionally in East Asian countries as a food coloring agent and a natural remedy for various ailments, including high blood pressure and hyperlipidemia. It has also been studied for its potential anticancer, antioxidant, and anti-inflammatory properties.
However, some studies have suggested that monascorubrin may have potential toxic effects on the liver and kidneys, especially when consumed in high doses. Therefore, regulatory agencies have set limits on the use of monascorubrin in food and other consumer products to ensure their safety.
